The recipes in the cookbook use gluten free 1:1 flour (Bob’s Red Mill is my go to), millet, sorghum, buckwheat, etc. I personally use a grain mill for them, but you can purchase them pre-milled in a flour form. I link all of those in the pantry guide I have added in the cookbook. No mill is needed, it's just an added bonus. Any flour can be substituted. There is absolutely NO almond flour used in any of the recipes.

This cookbook is loaded with no added sugar recipes! In fact, almost all of them are no sugar or have a no sugar added option. Most of the recipes are sweetened with mainly honey, maple syrup, maple sugar or fruits.
