How to Freeze Dry Eggs

When we have an abundance of eggs on the farm I have found freeze drying is the best way to store them. We start by cracking all the eggs into a big bowl, mix them up (we use an immersion blender I love this one linked here) and then grab your Harvest Right green silicone mold trays and the plastic tops. These will make it so easy to put them into the freeze dryer without spilling. 

Then I freeze a batch before putting them into the actual freeze dryer, doing this saves the freeze dryer a step and helps with things that are liquid. If you can freeze a batch while you have a batch in your Harvest Right you'll get more done. 

The below picture is post Freeze drying and I'm just popping them out of the green molds, they come out so easily, that is why the geen molds matter! If you've ever tried to break them apart on a flat tray it is so messy!

Then I took my mylar bags and I loaded them up with the eggs, just filled it almost to the top. you want to make sure you can pull the top closed and flatten it.

I use my hair straightener to seal it 3/4ths of the way, throw an oxygen absorber in and seal the rest. I did this for all of the eggs we mixed and now these bags of eggs will last us for 20+ years!

The freeze dryer I have is the Harvest Right size Large with the oil free pump.We use the Harvest Right silicone mats, green cube trays. an extra set of base trays with a set of lids. I went with the large size because it does 5 trays instead of 4 or less with the other models and can run on the oil free pump. It's more sustainable, less maintenance required option which works better for our family.
